
From test kitchen to your plate: Giulia's summer dish
Every dish on your menu has a story. This one is about eggplant parmigiana with ancient grain – where a summer memory, a local German superfood, and one food curator collide. Meet Giulia Terni, Join Program’s food curator in Germany.
In her own words:
„When developing a new dish, we always look for the perfect balance between taste and nutrition. As food curators, we’re constantly searching for ingredients that bring excitement to the table while delivering genuine nutritional value.
Many assume creativity feeds off endless options. Often, the opposite is true. Limits are powerful drivers of inspiration. We thrive within dietary constraints because they force us to focus on what matters most: turning carefully chosen ingredients into something truly special. This becomes especially important with plant-based dishes, where diversifying protein sources is key to a balanced nutritional profile.“

„While brainstorming for summer, one ingredient immediately caught my attention: Grünkern – green spelt in English. This local superfood earns its superstar status on both taste and nutrition. Harvested before full maturity and dried over a beechwood fire, it develops a nutty flavor with a gentle smoky kick. It originates from Franconia, where crops had to be rescued from the fields when bad weather hit. A proud product of necessity – and a story of resilience.
Don’t be fooled by its simple appearance. Grünkern is naturally high in protein (up to 12g per 100g), low in fat, and rich in fiber, magnesium, and iron. Combined with pulses or nuts, it delivers a powerful plant-based protein punch.“

Growing up in Italy, eggplant parmigiana was the delicious soundtrack to hot summer days – grasshoppers chirping loudly in the background. Quintessential comfort food. A dish I periodically crave and will never grow tired of.
